Cilantro Lime Grilled Chicken

Man o man was this good. I’ve had a real problem with my new recipes lately in that I get so excited to eat I forget to take a picture! You really should make this soon, especially if you’re a Yankee and it will soon be too cold to grill.

4 boneless chicken breasts
1/2 cup mayo
1/2 cup olive oil
2 T chopped cilantro
2 T lime juice

Mix everything but chicken together. Put the marinade and chicken in a gallon size baggie. Let the chicken bathe in all that goodness all day and grill it up for dinner.

I’m not really going crazy tracking my food anymore. After a year and a half, I know what to eat and how much, so I didn’t enter this recipe in fatsecret to get the details. Since the only thing with carbs is the lime juice and you don’t even eat all the marinade, the carb count is really low. I would be surprised if it even had one carb per serving.
