Creamy Ro-tel Chicken

Saw this posted on the Atkins Forums by LiRoGe88. Sounds fantastic!

1 pound boneless/skinless chicken breasts(abt 3 in a package)
2 tablespoons olive oil
1 can Rotel brand tomatoes with green chilis (the chopped, not whole kind)
4 ounces cream cheese
1/2 cup cream

Cut chicken into bite size pieces. Cook chicken in a large, non-stick skillet in the olive oil. Once it’s cooked through, remove the chicken and add the tomatoes, cream cheese (cut into little pieces) and the cream. Stir until it’s all melted and simmering gently. Add the chicken back in, and cook over low heat for 5 minutes.

    Try adding scallions, cilantro, garlic salt, ancho chili powder, and cumin to spice it up. Very similar to a recipe I made today that we ended up using as a dip. I added black beans to thicken mine because I didn’t have enough chicken, before I asked you the bean question. 🙂
