Zucchini Taco Boats

I really wish I could give Gregor for this one. It was posted in the thread I am part of over at Atkins.com a while back. We get repeated requests from new members to re post it, so Carey thought it would be a good idea to post it here on lowcarbhoo. Since women are generally right about everything, I agrees. I’ve never had this recipe, as I am the sole member of my household who likes zucchini, but it does look good and it gets rave reviews over at the forum. If you try it, leave a comment about how you like it!!

4 medium zucchini, sliced in half lengthwise
1 lb ground beef (chicken would be good too)
1/2 c. salsa
fresh cilantro (optional)
1 teaspoon chili powder
1/2 t ground cumin
1/4 t salt
1/8 t pepper
4 oz mexican cheese mixture, shredded

Scoop out pulp from zucchini, place shells in microwave dish. microwave on high 3-4 minutes until tender.

I a skillet brown ground beef, drain. Stir in salsa, cilantro, spices and 1/2 of cheese. Spoon into the zucchini boats.

Microwave on high for 4 minutes, top with remaining cheese and microwave for 3-4 more minutes. Cheese should be melted and zucchini should be firm but tender. Serve with salsa and sour cream..

Even if you don't struggle with your weight, I highly recommend you taking on the low carb way of life. The health benefits to doing so are legion! I have a beautiful wife and two of the most adorable children a dad could ask for.
