Broccoli Cheese Soup

This is something I made up a little over a year ago.  It is soooo freaking delicious.  Best thing about Atkins is I don’t have to get my boxers in a wad over calories.  Good thing, because this clocks in just shy of 1,000 calories per serving!  LOL!

16 oz shredded cheddar cheese
2 c heavy whipping cream
5 c frozen broccoli florets
1/2 t pepper
1 c mayo
14.5 oz can chicken broth

Boil and drain the broccoli florets. chop up to small bits and set aside.
In a double boiler, melt together the cheese, whipping cream, pepper and mayo.
Add the can of chicken broth, stir to combine and heat through. Add back in the chopped broccoli florets. Heat through. Enjoy!! Makes 5 servings.

I am a low carb fan and have been for over a year now. Before I discovered this way of eating, I was pre-diabetic, had off the charts cholesterol and high blood pressure. With no meds, all of that stuff is normal now. Thank you so much, Dr. Atkins, for showing me such a wonderful way of eating that is delicious, satisfying and healthy! Even if you don't struggle with your weight, I highly recommend you taking on the low carb way of life. The health benefits to doing so are legion! I have a beautiful wife and two of the most adorable children a dad could ask for.
