Susan’s Low Carb Sausage Balls

Susan sent this recipe for some low carb sausage balls. I generally make my old recipe but use carbquick instead of bisquick, but this looks like a pretty good alternative, since carbquick is so danged expensive.

2 lbs bulk pork sausage
1 lb ground beef
3 eggs
2 tablespoons dried onion flakes
1/2 teaspoon black pepper
1/2 lb sharp cheddar cheese, shredded

1) Mix all the ingredients together until thoroughly blended (it is best to use your hands).
2) Form into about 4 dozen 1 to 1 1/2 inch b@lls and place on a cookie sheet or broiler pan.
3) Bake at 375°F for about 25 minutes.
4) Once they are cool, they can be sorted into individual zip bags and frozen for a grab-and-go breakfast.

I’ve made these a few times and change it around sometimes. What makes these low carb is the fact that there is no flour, bisquick, or bread crumbs added. But sometimes I’ll add ground flax seed. (especially since the 3 eggs make it a little moist), You might want to try it with just 2 eggs before adding the 3rd. Sometimes I don’t use cheese. You can also make it with all sausage (without the ground beef), You can also make them smaller, but then cooking time is a little shorter

About wahoowa96

I am a low carb fan and have been for over a year now. Before I discovered this way of eating, I was pre-diabetic, had off the charts cholesterol and high blood pressure. With no meds, all of that stuff is normal now. Thank you so much, Dr. Atkins, for showing me such a wonderful way of eating that is delicious, satisfying and healthy! Even if you don't struggle with your weight, I highly recommend you taking on the low carb way of life. The health benefits to doing so are legion! I have a beautiful wife and two of the most adorable children a dad could ask for.
