Low Carb Blueberry Muffins

It has been a while since I posted a new recipe, but that is in keeping with my policy of only posting truly outstanding new foods.  This qualifies as truly outstanding.  I can’t believe how good these were!  You won’t believe how moist and delicious these are.  Click here for the basic recipe.  Then, to make them truly amazing, thaw out 140g of frozen blueberries.  Stir those bundles of goodness in to the batter and then proceed with the cooking instructions on the site.  I made these on Sunday for breakfast during the week.  They microwave very nicely.  I nuked mine for only 20 seconds and then enjoyed them as if I was doing something wrong.

If you decide to make these, let me know how you liked them!

About wahoowa96

I am a low carb fan and have been for over a year now. Before I discovered this way of eating, I was pre-diabetic, had off the charts cholesterol and high blood pressure. With no meds, all of that stuff is normal now. Thank you so much, Dr. Atkins, for showing me such a wonderful way of eating that is delicious, satisfying and healthy! Even if you don't struggle with your weight, I highly recommend you taking on the low carb way of life. The health benefits to doing so are legion! I have a beautiful wife and two of the most adorable children a dad could ask for.
