Muffin in a Minute

This is an Atkins standby for an alternative to bacon and eggs for breakfast.  Some people even like to make sandwiches with them.  You can add all sorts of things to them, like strawberries, blueberries, etc.  My favorite addition is natural peanut butter.  Whatever you decide you want to add, just make sure it is appropriate for the phase you are on.  You can check acceptable lists of foods by phase here: http://www.atkins.com/Program/ProgramOverview.aspx

1/4 cup golden milled flax seed

1 teaspoon cinnamon

1 teaspoon baking powder

1 packet Splenda

1 Tablespoon heavy cream

1 egg

mix all together and microwave the muffin one minute

about 2 net carbs

for chocolate, add another Splenda, and 1 teaspoon Hershey’s natural unsweetened Cocoa powder
