Foccacia-Style Bread

2 c. flax seed meal
1 Tbsp. baking powder
1 t. salt
1-2 Tbsp. sugar equivalent from artificial sweetener
5 beaten eggs
1/2 c. water
1/3 c. oil

Preheat oven to 350 F. Prepare pan (10 x 15) with oiled parchment paper or a silicone mat.

Mix dry ingredients well. Add wet to dry, and combine well. Make sure there aren’t strings of egg white hangout out in the batter.
Let batter set for 2 to 3 min. to thicken up some (if you leave it too long, it will be hard to spread).
Pour batter onto pan, in roughly a rectangle an inch or two from the sides of the pan.
Bake for about 20 min. until it springs back when you touch the top and/or is visibly browning even more than flax already is.
Cool and cut into whatever size slices you want. A spatula will cut it.
Nutritional info: Each of 12 servings has less than a gram of NC (.7 g according to Laura Dolson), 5 g fiber, 6 g protein, 185 calories.
