Nancy’s Shrimp in Garlic Cream Sauce

It is really a shame that my family doesn’t like seafood, because this recipe sounds awesome.  I guess I will just have to enjoy it vicariously through y’all!

1.5lb large shrimp, cleaned and shelled

1/2 – 3/4 cup full fat cream cheese

1/4 cup heavy cream

1 tbsp chives, fresh or dried

1/2 tbsp parsley, fresh or dried

1.5 cloves garlic, minced

1/2 tsp salt

1/4 tsp ground black pepper

2 tbsp butter

xanthan gum (optional)

 

fry garlic in butter until golden, then add shrimp to pan and fry until pink. Stir in cream cheese and cream until smooth, then add herbs and seasoning to taste. Check thickness of sauce and add a pinch of xanthan gum if it needs thickening.

 

Serve over a bed of cauliflower rice (1/2 – 1 head cauliflower chopped in food processor until it resembles rice, then sauteed in butter until just cooked). Add a sprinkle of paprika when serving for a bit of colour 😉

 

I get 4NC per serving sauce and around 2 NC per serving cauliflower.

 

Makes 3 – 4 servings.
