Crystal’s Seafood Chowder

Again with a super yummy looking seafood recipe that I can’t have because of my picky family!  Maybe I will just have to force feed it to them.  LOL.

1 1/2 cups Heavy Cream

1/4 cup onion

1/4 c celery (really just one stalk)

3 slices bacon

1 bottle clam juice

2 6 oz cans clams (drained, reserve juice)

1 6 oz can crab (lump/white, either is fine, drained)

1 6 oz can shrimp, drained

1/4 head of cauliflower (about 1/2 c) chopped into small pieces

3/4 c chicken broth

2 T butter


Fry/cook bacon, remove meat and use grease to cook onion & celery. Once fairly translucent, add clam juice and reserved juice from drained clam cans along with cream to pot, let simmer. add salt/pepper if you like. Add the cauliflower and lett cook til tender, about 5-10 minutes. Add in all meats (except bacon) and let simmer a few more minutes. Add in the chicken broth. I like to let mine simmer for 15-20 to blend flavors. Lastly- stir in two Tablespoons of Butter (unsalted if you have it).

This makes between 8-10 servings @ aprox 1 cup per serving. I totalled up 6.08 NCs per serving (but I fear I may be off).


Add cheese and bacon if you’d like as toppers and enjoy!!
