This recipe was posted by Steph on a forum I participate in on atkins.com. I have never made this recipe, but I am sure its great! If you make it, post how awesome it is!!!
1 T butter, melted plus 1 T to grease pan
3/4 C grated parmesan cheese
4 oz swiss cheese
1 large egg, beaten
dash of salt and pepper
4 boneless skinless chicken breasts
8 thin slices of ham
Pound chicken breasts to about 1/3″ thick. Place ham on chicken then 1 oz of swiss cheese (can use bleu cheese). Roll up; securing with a toothpick. Mix melted butter and egg. Dip each chk breast into butter/egg mixture. Roll in parmesan cheese and place into greased baking dish. Bake at 350 F (175 C) for 30 to 35 minutes or until browned and tender.
