Janet’s Bacon Wrapped Chicken Thighs with Gouda

4 slices thick bacon

4 oz smoked gouda cheese

2 tbsps butter

4 chicken thighs or breasts

1/2 tsp garlic powder

1/2 tsp pepper

1/4 tsp paprika

1/4 tsp cayenne pepper

Pre-heat oven to 350° F

Flatten chicken breasts to 1/4 inch thickness.

Combine pepper, garlic powder, paprika and the cayenne together in a small bowl and spread evenly on both sides of the chicken breasts. (This can be rather spicy, if in doubt, use about half of the spice mixture.) Salt to taste.

Cut the gouda cheese into small peices and place 1 oz of cheese on each chicken breast. Press down firmly and roll the chicken from the narrow end. Wrap each roll in a slice of bacon and secure with a toothpick

Melt the butter in a skillet over medium heat. Brown chicken rolls evenly until the bacon starts to get crisp. Place the chicken rolls into a baking dish and bake at 350° F for 20 minutes. Remove toothpicks prior to serving

About wahoowa96

I am a low carb fan and have been for over a year now. Before I discovered this way of eating, I was pre-diabetic, had off the charts cholesterol and high blood pressure. With no meds, all of that stuff is normal now. Thank you so much, Dr. Atkins, for showing me such a wonderful way of eating that is delicious, satisfying and healthy! Even if you don't struggle with your weight, I highly recommend you taking on the low carb way of life. The health benefits to doing so are legion! I have a beautiful wife and two of the most adorable children a dad could ask for.
