Gosh o’ Golly Goulash

12 oz ground beef, browned

3 cloves minced garlic

2 cans petite diced tomatoes with jalapenos

8 oz coarsely chopped bok choy

8 oz sliced mushrooms

6 oz coarsely chopped onion

Oregano or pepper to taste, if desired.


Brown the ground beef with the minced garlic. Pepper to taste.

Add the mushrooms, onion and bok choy.

Continue to cook about 2-3 minutes.

Add tomatoes. Mix well and simmer about 10 minutes.

For Asian flair, add 3 tablespoons soy sauce and grate some fresh ginger into the meat as it browns, leaving out the oregano.

The oregano gives it an Italian flair.


This is a simple, quick meal. I divide it into 5 portions. They are large portions! It has 245 calories/serving with 11 net carbs from veggies. One serving of this almost covers your minimum veggies for the day.

Sprinkle some grated sharp cheddar on top, or some grated parm.

This definitely isn’t your mother’s diet food. 🙂
